📘 Introduction
Food spoilage is a major global issue leading to significant waste, health risks, and economic losses. Traditional methods rely on visual inspection or expiration dates, which are often inaccurate due to varying storage conditions like temperature, humidity, and gas emissions from decomposition.
Food spoilage causes massive global waste, health risks, and economic losses. According to the UNEP Food Waste Index 2024, around 1.05 billion tonnes of food were wasted in 2022 — about 19% of available food — contributing 8–10% of global greenhouse gas emissions and linked to 600 million foodborne illnesses yearly. Historically, people relied on sight, smell, and taste to judge food quality, with early preservation methods like drying and salting used for centuries. The 19th century brought microbiology (e.g., Pasteur’s work), and the 20th century introduced expiration dates and basic sensors. Today, IoT and smart sensors enable real-time, accurate detection.
Case studies show strong results: retailers using AI-IoT systems reduced waste by 14–30% (e.g., IKEA cut food waste by 30% in one year with smart monitoring). IoT cold-chain solutions have prevented spoilage in transport and extended shelf life in trials.
Advancements in IoT, sensors, and microcontrollers enable real-time, automated monitoring of food quality. This project develops an IoT-based food spoilage detection system that uses gas sensors to detect volatile compounds (e.g., ethanol/alcohol from fermentation/decay), alongside temperature and humidity monitoring. Data is displayed locally on an LCD, triggers alerts via buzzer, and uploads to ThingSpeak cloud for remote viewing/alerts via mobile/web. The system helps prevent consumption of spoiled food in homes, warehouses, or supply chains. The project uses an Arduino Uno to process sensor data, activate alerts when thresholds are exceeded (e.g., high gas levels indicating spoilage), and transmit via ESP8266 Wi-Fi. Power is supplied sustainably from batteries regulated to 5V.

- Power Supply: Two 4V batteries in series (~8V input to 7805 for 5V output).
- Connecting Wires, Breadboard/PCB, Resistors (e.g., 10kΩ for DHT11 pull-up).
- Optional: Potentiometer for LCD contrast, enclosure for sensors.
Methodology The Arduino Uno reads data from:
- MQ3 sensor (analog output on A0) for gas concentration (ethanol vapors rise during spoilage, e.g., >200-300 ppm threshold).
- DHT11 (digital pin, e.g., 2) for temperature/humidity (high values accelerate spoilage).
Processed data is displayed on the 16×2 LCD (connected to digital pins 7-12 for RS, EN, D4-D7). If gas levels exceed threshold (or temp/humidity out of safe range), the buzzer (pin 6) sounds an alert.
The ESP8266 (software serial on pins 3-4) connects to Wi-Fi and uploads readings to ThingSpeak channels (e.g., fields for gas ppm, temp °C, humidity %). Remote users view graphs/dashboard on ThingSpeak app/web and receive potential alerts (via integrations like email) can be added too in this project.
Power from two 4V batteries is regulated to 5V using 7805 IC for stable operation of all components (ESP8266 uses Arduino’s 3.3V pin).
Theory of Operation Food spoilage produces volatile organic compounds (VOCs) like ethanol (from fermentation) and others during bacterial/yeast activity. MQ3 sensor (SnO2-based) changes resistance in presence of alcohol vapors, outputting analog voltage proportional to concentration (0-1023 on Arduino ADC).
DHT11 uses capacitive humidity sensing and NTC thermistor for accurate temp/humidity readings. High humidity (>80-90%) + warmth (>25-30°C) promotes microbial growth.
Data processing: Arduino compares values to predefined thresholds → local display/alert + cloud upload via AT commands to ESP8266.
